I switched from my faster plan and grabbed the slower fast plan in the MightyMoblie app.
It was quick and easy, just need to keep an eye out in 6 months time on any deals.

With mighty mobile, how long do numbers stay active after a plan expires before losing the mobile number forever?
“If you have not purchased any plan for 365 days after the expiry date of your last Plan then you will lose your allocated phone number …”
And the only thing I didn't like when activating was I had to put in a credit card/debit card to activate my account which is dumb.
I just use a disposable card number from the likes of Wise or Revolut for this kind of thing.
Then you can just freeze / delete it afterwards.
