my mum cracked her screen today and is not worth repairing as its 5 years old Xiaomi was and still is a nice phone and can still be used but she hates the crack

Is it just the screen protector? Some great utube clips on replacing them.

I just got a Samsung A56 for $575 through Samsung Educational store. You need educational institutional email address like a school or college to get it set up though. Basically sign up with a new account using this link https://www.samsung.com/nz/offer/student-discounts/ Base price is $639 plus a 10% first purchase discount.
It might be worth waiting until Mother's day to see if any good Samsung deals come up. There were some good offers last year.

The best would probably be waiting for samsung to do more of their big trade-in deals. Last year I got the S24 for $550 and the S24FE would've been around $400 if I had chosen that instead. If you can get them cheap with the trade-ins then they've got better specs for the money than the chinese phones (poco, redmi, etc)
