You need to link your steam account to claim the deal. You can link a new (empty) steam account. After checkout un-link the account and get the game key and use that in your steam client while signed in with your main steam account.
If you truly don't want Humble Bundle from knowing about your steam profile I'd say start a new incognito browser to do all this.There is nothing wrong with humble bundle. Also all they get when you link you steam account is your public info meaning if they were hacked your steam account wouldn't be in danger, plus I assume you have steam guard (as steam is almost unusable without it). There is no way this could be a phishing site (I've used it heaps, 18 pages of keys) because when you link the account, it takes you to the steam login page (the only way to do it). If you are just privacy conscious I dunno what they would want from your public steam account (personalised advertising, lol?) but feel free to do it your way and yes you can unlink your account afterwards. I personally do, that way I get a key (I have several accounts) instead of all them linking to the one account. Unfortunately, I have dirt 3 complete on most of my accounts. It's a good game, definitely recommend especially considering it's free!
I'll be doing this because steam guard won't let me log in to humble bundle :( They keep sending verification codes to an old email I can't use. Currently waiting on support :(
