Where are the geforce now servers? Isn't latency going to be an issue for us as you can bet it's not on shore.

They are all in Australia. I had the casual plan up until recently, and didn't really have any issues with lag.
I probably didn't have this setup correctly, but I did try it on a trial and there was a subtle delay/lag that ruined the experience.
